Pancakes

1/4 c. Flour

1/2 tsp. Salt

3 tsp. Baking Powder

1 Tblsp. Sugar

1 Beaten Egg

1 c. Milk

2 Tblsp. Melted Shortening

Mix dry ingredients together. Then add liquids to flour mixture. Beat gently until smooth and then add in melted butter. Cook on hot griddle. Makes 18 Large Pancakes.

Basic Omelets

3 Eggs

Salt

Pepper

Ham, Chopped

Cheese, Grated

Use a non stick frying pan, coat with cooking spray or a little oil. Beat eggs lightly, add salt and pepper. Put eggs in a pan and swirl around. Let bottom cook for about 2 to 4 minutes and top with ham and cheese. As it cooks on the bottom, take a fork and poke holes in the egg to let raw parts get through the bottom. When cheese starts to melt take a plastic spatula and gently run it around the edges and work slowly underneath 1/2 of the omlet and gently turn it over. Sprinkle top with cheese and let it melt a little. Slide on plate and enjoy.

Cocoa Waffles

1-1/2 c. Flour

3 tsp. Baking Powder

1/2 tsp. Salt

1/3 c. Sugar

6 Tblsp. Cocoa

3 Egg yolks, Beaten

1 c. Milk

1/4 c. Butter, Melted

3 egg whites, stiffly beaten

Toasted Almonds, optional

Whipped Cream, Optional

Chocolate/Fudge Sauce

Sift dry ingredients together in a large mixing bowl. Combine the wet ingredients, omitting the egg whites, and blend into the dry ingredients. Carefully fold in the egg whites to the combined mixture keeping as much of the air as possible to ensure light tender waffles. Bake in a hot prepared Teflon/stick proof hot waffle iron. When done you can add the almonds, whipping cream or sauce as desired.
